TASTES LIKE
You’re wrapped in warmth from the first nose of this whisky — salted caramel melts into golden honeycomb and a whisper of honeysuckle. On the palate, that saline-sweet caramel deepens, layered with vanilla ice cream and overripe apricot, before thickening into pecan pie richness. Banana chips bring a crisp, tropical chew; there’s also nostalgic notes of warm waffles with maple syrup. To finish, a playful fizz of kola cubes is grounded by toasted walnuts, oak sawdust, and a flicker of smoked Maldon sea salt.

THIS MADE THE CUT BECAUSE
From our very first conversations with the Fielden team, one thing kept coming up: Cask 292. “Ask Charlie about Cask 292.” So we did. One sip, and it was a resounding yes. And then we heard its story - and we were amazed.
This is a 100% rye whisky finished for just over 2 years in a 45-year-old ex-Solera Oloroso Sherry cask from a bodega in Sanlúcar de Barrameda.
This is coastal sherry territory, where the Atlantic winds give the wine a signature minerality. That maritime character has transferred beautifully into the whisky, melding with the Oloroso toffee/nuttiness to create an insane amount of complexity and richness.


PAIRING SUGGESTIONS
With the whisky’s rich, salted caramel warmth and soft fruit notes, we’ve chosen two beers that echo and elevate without stealing the spotlight. Wiper + True’s Sundance IPA delivers a hazy hit of orange zest, ripe pineapple, and sticky pine, all grounded by a warming malt backbone.
For the perfect high/low pairing, Adnams’ Ghost Ship 0.5% Pale Ale brings refreshing citrus, elderflower, and a subtle rye spice that beautifully complements the whisky’s rye base.
