#15 STARWARD
Our second Starward cask - this time showcasing the magic of French oak.
Elegant and expressive, this whisky is a study in harmony between wood, wine, and whisky making. A red wine cask that delivers depth, spice, and florals in equal measure - it’s juicy, structured, and just plain delicious.

TASTES LIKE
The nose is a springtime stroll: cherry blossoms in bloom and roses, sweetened by a nostalgic hit of strawberry laces. The palate is indulgent and textured - sticky toffee pudding drizzled with treacle, softened by creamy macadamia and a whisper of almond, and steeped in orange flower water. Hints of white cherries and candied ginger brighten the mid-palate, while cacao and a dusting of cinnamon and vanilla carry through to a long, velvety finish.

MEET THE DISTILLERY
Starward lives by two secret ingredients: red wine barrels and Melbourne's wild weather. Learn more about them here.
THIS MADE THE CUT BECAUSE
We’ve always been fascinated by the influence of oak - and this cask is a perfect example of what French oak can bring to the table. Where American oak gives lift and sweetness, French oak adds grip, spice, and structure. Paired with a fresh red wine fill, this cask delivers a beautifully layered whisky: floral and elegant up front, rich and indulgent through the middle, with a finish full of warmth and finesse. It’s Starward doing what they do best - taking what’s local, and turning it into something world-class.

PAIRING SUGGESTIONS
For this cask, we’ve gone with one of our favourite Edinburgh breweries - Newbarns - and their West Coast Keller IPA. With just the right balance of spice and fruit, it’s the perfect canvas for this whisky to shine. The beer’s hoppy brightness lifts the dram’s floral and spicy notes beautifully.
Looking for a High/Low pairing? Try Below Brew Co’s Forgot to Take My Pils - a juicy, crisp, hoppy pilsner that clocks in at just 0.5% ABV but still packs serious flavour.
