WHO, AND WHAT, IS THE HEART CUT?

Hi! We’re Georgie and Fabrizio - a wife and husband duo with a shared passion for whisky and cocktails. Drinking them, talking about them, trying new ones - we’re always on the lookout for the next great drink and great bottles to have in our homebar. Oh, and travel - we love to travel. 

We’ve spent our whole careers working in the drinks industry, and in that time we’ve been fortunate enough to travel the world, visiting distilleries as others would museums, and ticking off cocktail and whisky bars. And nothing excites us more than discovering somewhere new, that’s slightly off the beaten path, and telling our friends about it for their next visit.

Whisky is now made in over 100 countries across the world! From Australia to India, Mexico to Denmark, and beyond, in each lies distilleries with passionate people behind them, waiting to be explored! But how do you explore new distilleries, when you don’t know where to start…well, we’ve done the hard work for you! 

Enter The Heart Cut. 

The Heart Cut is an independent bottler collaborating with whisky distilleries from across the world to release one-off single cask and small batch bottlings. 

From small innovative producers in unexpected locations to internationally renowned brands, we’re shining a spotlight on distilleries across the world through our releases, hoping to introduce you to some new favourites along the way.

Limited to a few hundred bottles at a time, each carefully selected cask has been picked in collaboration with our partner distillery, telling their tale of people, provenance and the pursuit of crafting distinctive flavours through the art of production.

And the best part? We keep things fresh by unveiling new bottlings frequently throughout the year, so there’s always something new to try, and new bottles to add to your home bar (as well as ours)!

And as for our name…

During distillation, spirit runs off the final still in three phases, often called the heads, heart and tails. To separate between the three stages, distillers keep a close eye on the spirit run and make a ‘cut’ between each phase, resulting in the heads and tails ending up in one vessel, and the prized ‘heart cut’ in another. 

Whereas the heads and tails are recycled and used in the next spirit run, The Heart Cut is the cherished part that holds that distillery character, and will either go on to be bottled, or placed into a cask for maturation. 

To us, The Heart Cut represents the distillation of collective decades of working in the spirits industry and condensing that into each release we bring out. Through these releases, we hope to share our passion for spirits, and help you discover new distilleries from across the world!
