FLAVOUR DEEPDIVE
This is a whiskey that leads with fruit.
It opens with an immediate burst of bright red berries - juicy raspberries and redcurrant jelly - lifted by a fragrant sweetness that hints at orange blossom and honeyed dessert wine.
Then comes the pastry: warm apple pie filling, flaky crust and the comforting sweetness of Rich Tea biscuits dunked in tea. The Moscatel cask brings a syrupy richness through the mid-palate, with booze-soaked sultanas, golden raisins and soft baking spice building gently.
The finish lingers on spiced orchard fruit, biscuit sweetness and a warm glow of baking spice.

LABEL INSPIRATION
For #23, the label draws on the mythology of the Boyne Valley, where Boann Distillery sits beside the ancient monument of Newgrange - famous for its alignment with the rising winter solstice sun.
The design imagines the moment where night meets day: a glowing sunrise on one side of the horizon, a silver crescent moon on the other, with constellations scattered across the sky. Hidden among the stars are subtle shapes of barley and pot stills - a celestial nod to the whiskey in the glass.

WHY WE CHOSE THIS CASK
Boann is one of the most exciting new names in Ireland right now. Family-owned and independent like us, and helping revive what made Irish whiskey great in the first place.
Single Pot Still is one of Ireland's most distinctive styles: rich, spicy and full of texture thanks to its mix of malted and unmalted barley. Historically, distillers also used oats, wheat and rye - grains they're bringing back through historic mash bills. This whiskey is built from 40% malted barley, 55% unmalted barley, plus small additions of oats and rye for creaminess, spice and complexity.
This single cask, single pot still was matured in a Moscatel de Setúbal cask from Portugal, bringing a vivid burst of red berries, pastry sweetness and warming spice.

THE DISTILLERY IN 60 SECONDS
Independent, family-run, and based in Ireland's Boyne Valley, Boann is on a mission to revive the lost character of Single Pot Still Irish Whiskey.
Most distilleries today make the style from just malted and unmalted barley. Boann is different. They're bringing back the historic "other grains" (oats, wheat and rye) that defined Single Pot Still for centuries but largely disappeared from Irish whiskey over the last fifty years. The distillery was custom-built to handle these grains, paired with Irish barley, Irish-propagated yeast and water from their own deep well.
Working with whiskey historian Fionnán O'Connor, they're also recreating Vintage Mash Bills - lost recipes from Ireland's distilling past - as part of his PhD research.
The result is whiskey that feels rooted in history but full of modern energy: vibrant, layered and unmistakably Irish.
