Rich vanilla from the American oak rounds things out, while dried apple adds balance and freshness on the finish. Lively, generous, and incredibly easy to enjoy.

Since our first visit to Starward in 2017, we’ve been hooked - not just on the whisky, but on what they stand for. A distillery that’s proudly and unapologetically Melbourne, using ingredients sourced within a day’s drive. How could we not want to partner with them?
Red wine cask maturation isn’t new - but the use of fresh red wine casks is. It’s a brilliant story of provenance and flavour. Most red wine casks used in Scotch are dried and shipped across the world, but Starward gets to use them straight from the Barossa, full of life, vibrancy, and wine-soaked character. And wow, does it show.
PAIRING SUGGESTIONS
We’re big fans of Good Chemistry in Bristol, and their Pure Optimism, a juicy, light 3.4% session pale ale%, is the perfect canvas to showcase this whisky’s jammy berry sweetness. For a High/Low combo, try Wiper + True’s 0.5% Kaleidoscope Pale Ale - another Bristol gem.

We chose this cask because it captures Starward at their most approachable and expressive - a fresh red wine cask, full of life, turned into a whisky that’s vibrant, modern, and unmistakably Australian.
