WHY WE CHOSE THIS CASK
Our first small-batch collaboration – with none other than Louise McGuane of J.J. Corry!
We explored her renowned 'Warehouse of Flavours' to a whiskey drawn from four unique casks that capture the full spectrum of Irish whiskey styles - Pot Still, Grain, and Single Malt. Two were fully matured in Oloroso and PX sherry casks, while the other two were finished in Oloroso and Pajarete casks. The result is a richly layered, perfectly balanced whiskey that epitomizes the forward-thinking spirit of modern Irish whiskey.
PAIRING SUGGESTIONS
We blended this whiskey with brightness and vibrancy in mind, so any beer pairing should dial up those same sunny, fruit-forward notes.
Wiper + True’s Sundance IPA brings citrusy zing and juicy hop character that lifts the whiskey’s apricot and lemon peel notes beautifully.

THE DISTILLERY IN 60 SECONDS
J.J. Corry is reviving the historic Irish tradition of whiskey bonding, led by founder Louise McGuane in Co. Clare. Rather than distilling themselves, they curate, mature and blend whiskey from across Ireland, selecting casks for balance, texture and flavour. The result is a modern take on a centuries-old practice - thoughtful, flavour-led and distinctly Irish.
We chose to work with J.J. Corry because their approach mirrors ours: collaboration, curiosity, and a focus on creating whiskies that are as delicious as they are considered.
