Hailing from the West Coast of Denmark, this cask perfectly represents Stauning Distillery’s provenance and the team’s innovative spirit. A heather-smoked single malt whisky - using local grains and locally foraged heather - matured in an ex-bourbon cask before spending 7 months in a Madeira wine cask. Enjoy!
PAIRING SUGGESTIONS
There’s a lot going on in this whisky! It’s sweet, it’s smoky, it’s moreish. So you’re going to want something that acts as a canvas for all these characters to come through. Tried and tested, we’d go with a session IPA such as Beavertown Neck Oil, or stay true to the whisky’s Danish roots with a Mikkeller Evergreen Session IPA.
OTHER COOL THINGS ABOUT THIS WHISKY
Heather smoked. Once a year Stauning produces a batch of whisky which is wholly heather smoked with heather from the surrounding moorland; this adds a delicate, perfumed aroma to the spirit.
Madeira finish. This whisky was finished for 7 months in an ex-Madeira wine cask. Coming from the island of Madeira, a small beautiful rock in the middle of the Atlantic Ocean, the wine has a unique taste coming from the repeated heating of the wine - inspired by the wines’ historic voyages on ships from the island to England and America. Typical flavours from Madeira wine include caramel, roasted nuts, raisin and coffee.
