THIS MADE THE CUT BECAUSE
Our first small-batch collaboration – with none other than Louise McGuane of J.J. Corry!
We explored her renowned 'Warehouse of Flavours' to a whiskey drawn from four unique casks that capture the full spectrum of Irish whiskey styles - Pot Still, Grain, and Single Malt. Two were fully matured in Oloroso and PX sherry casks, while the other two were finished in Oloroso and Pajarete casks. The result is a richly layered, perfectly balanced whiskey that epitomizes the forward-thinking spirit of modern Irish whiskey.
PAIRING SUGGESTIONS
Irish Whiskey…Irish Beer!
For our high/low pairing, of course, it’s none other than Guinness Zero - a firm favourite of ours. For something a bit juicier, check out Eight Degrees Brewery from Co. Cork and their Citra - a spritzy, tropical ipa.
