Hailing from the West Coast of Denmark, this cask perfectly represents Stauning Distillery’s provenance and the team’s innovative spirit. A heather-smoked single malt whisky - using local barley and locally foraged heather - matured in an ex-bourbon cask before spending 7 months in a Madeira wine cask. Enjoy!
OUR HALF + HEART RECOMMENDATION
There’s a lot going on in this whisky! It’s sweet, it’s smoky, it’s moreish. So you’re going to want something that acts as a canvas for all these characters to come through. Tried and tested, we’d go with a session IPA such as Beavertown Neck Oil, or for a high/low combo that stays true to the whisky’s Danish roots, try Mikkeller Drink’In the Sun - a 0.3% super breezy wheat beer.
THE DISTILLERY IN 60 SECONDS
Nestled on Denmark’s West Jutland coast, Stauning has been crafting distinctly Nordic whisky since 2005, born from a shared passion between nine friends who asked, “why not make world-class whisky here?” What started in a butcher’s back room quickly evolved into Denmark’s first purpose-built whisky distillery, where every step - from floor-malting local barley and rye to direct-fire copper pot still distillation and ageing - happens on site.
The result is whisky that reflects its landscape: local grain, gentle smoke from peat and heather, and maritime influence all grounded in thoughtful, traditionally driven innovation.
