The day we tried cask samples at the distillery in Evanston, Chicago is one we’ll always remember - sipping whiskey and talking about everything under the sun. Speaking of sun - this cask is a warm ray of sunshine on a cold winter's day.

THE DISTILLERY IN 60 SECONDS
FEW Spirits is a modern American distillery built on bold flavour and a refusal to play it safe. Founded in Evanston, Illinois - northern Chicago - they were one of the early names in the new wave of US craft distilling, with a focus on expressive rye whiskey made to stand up in cocktails and shine neat.
We chose to work with FEW because they embrace big flavour and aren’t afraid of long, unconventional cask finishes. Their rye has the structure and spice we love, and the confidence to take on a three-year Sauternes finish without losing its identity—resulting in a whiskey that’s generous, approachable, and quietly distinctive.
