These are : \u003c\/p\u003e\n\u003cul\u003e\n\u003cli\u003eThe Sea of Galilee : An area with high humidity for most of the year \u003c\/li\u003e\n\u003cli\u003eJerusalem Mountains : Characterised by low temperatures compared to the other areas in Israel, meaning a lower angel’s share. \u003c\/li\u003e\n\u003cli\u003eThe Desert : Arid and dry area with very low humidity\u003c\/li\u003e\n\u003cli\u003eThe Dead Sea : An area with an extreme climate - very hot and dry - where summer temperatures can reach 50°C\u003c\/li\u003e\n\u003c\/ul\u003e\n\u003ch5\u003eTo create the fruity, oily, chewy whisky they had in mind, they needed to make the region's climate work in their favour.\u003c\/h5\u003e\n\u003cp\u003eSo it was only natural that they bought in Dr. Jim Swan, one of the world’s most accomplished master distillers and an expert in hot climate distillation and maturation, to help design the distillery around these two factors.\u003c\/p\u003e\n\u003cp\u003eRemember that the climate in Israel is very different to that of Scotland - the country experiences 300 days of sun a year. As we said - VERY different! Under these temperatures, spirit will interact more rapidly with the cask during maturation, taking on flavour compounds from the cask in a shorter time period.
