#19 Thomson - a single cask, single malt from Thomson Distillery in New Zealand, matured in a fresh NZ Pinot Noir cask from neighbouring Westbrook Winery.
#14 Starward - from Melbourne's Starward distillery, this single malt has been fully matured in a Fresh red wine barrique from the Barossa Valley, made of American oak
#15 Starward - Another single cask, single malt from Melbourne's Starward distillery, this time matured in a Fresh red wine barrique from the Barossa Valley, made of French oak.

Thomson Distillery, 100% independent and New Zealand owned, sourced a fresh, wine-soaked Pinot Noir cask direct from Westbrook Winery in Waimauku, crafted by respected winemaker and judge James Rowan. Decadent, rich, and bursting with red fruits and spice, this is their answer to a sherry cask - but with a juicier, more expressive edge. And as always with our single casks, it’s truly one of a kind.

Starward Distillery has firmly put Melbourne on the Whisky map. Matured in a fresh red wine cask from the Barossa Valley (crafted from American oak), this single malt is all about juicy red fruit and indulgent sweetness - guaranteed to put a smile on your face.
#15 Starward
We’ve always been fascinated by the influence of oak - and this cask is a perfect example of what French oak can bring to the table. Where American oak gives lift and sweetness, French oak adds grip, spice, and structure.
Paired with a fresh red wine fill, this cask delivers a beautifully layered whisky: floral and elegant up front, rich and indulgent through the middle, with a finish full of warmth and finesse. It’s Starward doing what they do best - taking what’s local, and turning it into something world-class.
