TASTING DEEPDIVE
This whisky opens with rich, smoky notes reminiscent of burnt ends, quickly joined by the dark, fruity sweetness of stewed plums and vibrant raspberry jam. As it develops, a savoury edge appears - bacon frazzles and scorched strawberries - before settling into smoked blackberries and nostalgic cola bottle sweetness on the finish. Smoky, sweet, and unapologetically bold, yet always in balance.

WHY WE CHOSE THIS CASK
White Peak Distillery in Derbyshire, the makers of Wire Works whisky, creates a lightly smoked, super fruity whisky, and when fully matured in a tawny port cask…wow. If ever a whisky was a winter warmer - this would be it.
It’s smoky and sweet, juicy and savoury - an explosion of burnt ends, smoked blackberries and scorched strawberry jam. With all of that going on in each sip, how could we not!
PAIRING SUGGESTIONS
As the distillery uses yeast from Thornbridge, it seems only natural to pair it with a Thornbridge brew! If you’re into your stouts, like Georgie, go for their Necessary Evil - an Imperial Stout matured in a Bourbon cask for 8 months, or for a lighter IPA we’d recommend Thornbridge Jaipur - Fab’s favourite.

THE DISTILLERY IN 60 SECONDS
White Peak Distillery, makers of Wire Works Whisky, are based in Derbyshire and were founded in 2016 as the region’s first full-scale craft distillery. Known for their lightly peated, fruit-forward spirit, they’ve built a cult following by combining traditional methods with a distinctly modern, flavour-first mindset.
We chose this cask because it captures everything White Peak does so well: approachable smoke, big flavour, and a willingness to let bold cask choices do the talking.
